From now through Saturday, Pearl & Ash is serving a riff on lemon meringue pie for dessert. Richard Kuo worked on this Greasy Spoons Week special with pastry chef Serena Chow. In the clip above, Kuo explains the inspiration:
We wanted to do something that's fun...something that people have a lot of familiarity with. Being summer, we wanted to do something light and sweet. We came up with the idea, and tasked Serena with the project of coming up with the concept of how to deconstruct a traditional lemon meringue pie, and then re-compose it in the style of the restaurant.Hit play on the video above to see Chow work her magic with the brown butter milk solids, dehydrated lemon cake, and lemon sorbet.
