Gabe Thompson's Diavolo Chicken From Dell'Anima

Welcome back to Sound Bites, an Eater original video feature in which footage of the city's most badass chefs crafting their signature dishes is paired with tunes from up-and-coming musicians. Regarding the volume: turn it up.

In this edition of Sound Bites, chef Gabe Thompson makes a fiery chicken diavolo to the sound of Surfer Blood's new track "Demon Dance." The song is available on iTunes, and the chicken is available at Dell'Anima in the West Village. I knew when we opened dell'anima that I wanted to have a good chicken dish that wasn't plain. One day I was putting together a tasting for the team and wandering around the spice isle in the supermarket. I saw smoked paprika on the shelf and thought "that would be awesome with chicken," then I saw fennel pollen and thought "that'll make it kind of Italian," and then the chili flakes were a no-brainer since the dish needed a little kick. The spice mix is actually pretty simple. I also wanted to serve half a chicken but didn't want people to deal with the bones, so we debone them while leaving the skin completely in tact. It was on our opening menu and people really liked it, so we kept it around.
