Aldea's George Mendes is going to expand the scope of his tasting menu to highlight the flavors of Portugal's "colonies and cross-pollinations," including Brazil, Goa, Angola, and Japan. Over a meal of sardines at Seabra's Marisqueira in Newark, Mendes explains: "The whole age of exploration is what guides me at Aldea." The first menu change will focus on Brazil. [NYT]
