Union Square Hospitality Group culinary director Michael Romano was on Taste Matters today to talk about his cookbook Family Table. He echoes Danny Meyer's recent comments on the idea of the staff meal, saying, "If you're well-fed, you feel taken care of. And if you feel taken care of, then you are more inclined to take care of those will be fed by the restaurant. It just creates this wonderful synergy and this wonderful virtuous circle." [JBF]
