Stumptown Coffee Roasters is opening what may be its most elaborate coffee shop yet in Greenwich Village later this week, with a brew bar that amounts to a choose-your-own adventure for black coffee. Customers will not only choose their variety of coffee from a catalog of roasts and origins, and they can also choose their preferred preparation from a list that ranges from French press and Chemex to siphon and A60. And if that's not enough of a hands-on experience for you, the New York Times writes the brew bar will be "as much a workshop as it is a place to get a coffee," with regular demonstrations and free cuppings.
Meanwhile, Intelligentsia Coffee will open its first New York outpost in in the lobby of the High Line Hotel next week with a similar focus on brewed coffee, although in a somewhat more curated form. Pour overs and espresso drinks will always be on the menu, but the baristas will also pick out a second type of coffee each day and brew it with whatever method they decide is best after conducting a pre-opening cupping session.
