Acclaimed pastry chef Sandro Micheli is planning to leave Daniel later this year and move back to his native France. A rep for Daniel Boulud writes, "We are of course happy and support his move back to France." The restaurant has not announced his departure date or his replacement, although it sounds like Boulud has already made the call.
Sandro started at Daniel in 2000 as a pastry sous chef. He worked at Adour for six years, and then he returned to Daniel in 2011 to replace executive pastry chef Dominique Ansel, who went on to open his own bakery.
Micheli is leaving one of the most coveted positions in the pastry world, and Boulud will most certainly pick another major talent to fill this slot. Although the chef has not revealed his future plans, word on the street is that Micheli is going to work for Alain Ducasse at one of his restaurants in France.
