Chef Justin Hilbert has left Gwynnett St., the Williamsburg critical darling that he opened a year and a half ago. Owner Carl McCoy tells Eater that former sous chef Owen Clark is now the executive chef at the restaurant. Clark has been at the restaurant since its inception. Gwynnett St.'s homepage actually notes that "Justin wouldn't sign on at Gwynnett St. without Owen on his opening team."
McCoy tells Eater: "The style and food with remain the same and we are continuing on the same seasonally driven cuisine...I am confident in Owen taking the reigns, he's a bad ass." Before coming to Gwynnett St., Clark worked at wd~50 and Blue Hill. It sounds like Hilbert wanted to strike it out on his own.
