Sound the trumpet and beat the drum because Tørst, Greenpoint's craft beer cave of dreams, is now officially open to the public. This is the new bar and restaurant from esteemed Danish "gypsy brewer" Jeppe Jarnit-Bjergsø and Momofuku alum Daniel Burns. In the spring, Burns will begin serving a menu of Scandinavian-influenced American fare in the 25-seat back room space, but for now, Tørst is offering beer, cheese, and charcuterie. Tørst has over 20 temperature-controlled taps that are hooked up to a "flux capacitor" system that allows the bartenders to control the nitrogen and carbon dioxide mixes of each ale. The bar has over 20 beers on tap, arranged by their color, light to dark. And, in a remarkable feat of design, the handles are the colors of the beers.
Although the Tørst beer warlocks have not released the final draft list yet, expect selections from Jarnit-Bjergsø's Evil Twin Brewing company, as well as several other extremely rare European craft beers (check out a rough draft of the list here). Jeppe is consulting on the beer program along with Brian Ewing of 12 Percent Imports, and former DBGB staffer Jon Langley is the general manager. Tørst is open Sunday through Wednesday from 12:00 p.m. to 12:00 a.m., and Thursday through Saturday from 12:00 p.m. to 2:00 a.m. Take a look around, and do send any early reports our way.
