Over on Eater National, a discussion about LA's Red Medicine outing no-shows has led to an anonymous commenter pointing to a 1995 Times profile of Lutèce's André Soltner. Of note: "A classic tale of Mr. Soltner's was when he called a no-show customer at 3 A.M. 'I said: 'My staff and myself are still waiting for you. Should we continue?' ... Did he feel great doing it?
