2013_3_soltner.jpgOver on Eater National, a discussion about LA's Red Medicine outing no-shows has led to an anonymous commenter pointing to a 1995 Times profile of Lutèce's André Soltner. Of note: "A classic tale of Mr. Soltner's was when he called a no-show customer at 3 A.M. 'I said: 'My staff and myself are still waiting for you. Should we continue?' ... Did he feel great doing it? He laughs a big belly laugh. 'I still feel great,' he says." [NYT, Eater National]
