Bar Zeruko, one of San Sebastian, Spain's more avant-garde and modernist pinxtos bars, may soon expand to New York. The restaurant and bar's chef Jose Antonio Calvo is in town this week demoing a menu of 66 pinxtos (bite sized snacks to smallish dishes) to select industry and media guests as a kind of sneak preview to show what he plans to bring to the city later this year. Though Calvo does use traditional Spanish ingredients (especially favoring foie gras), he's well known for his use of modernist techniques, offering often surprising dishes that look a little something like this or this (see a New Yorker's take here and a whole pretty slideshow here).
It's unclear how similar the layout and menu will be to that of the original bar—which just offers standing room by the bar and a handful of small tables—but sources say his team is actively scouting the West Village for a location.
