Craig Wallen is out as the executive chef at Spasso, Bobby Werhane's West Village Italian spot. Taking his place is Ed Carew, most recently executive chef at Le Caprice, the now-shuttered restaurant at The Pierre Hotel in the space now occupied by Sirio. He's also spent time in the kitchens of Craftbar and Gramercy Tavern and a handful of San Francisco restaurants.
Carew came on board two weeks ago and is still in the process of tweaking the Spasso menu. Some items, like the cheese service and many of the pastas, will stay, but he's bringing some new touches to it as well. The new menu should roll out in the next couple of weeks.
