Frej's Richard Kuo Returns With the Opening of Pearl & Ash at Bowery House

Pearl & Ash is the new restaurant at the Bowery House tenement/hotel/flophouse, replacing Bowery Kitchen. It's run by Richard Kuo, who was, of course, most recently the chef and co-owner at the insanely popular and incredibly short-lived New Nordic pop-up Frej and has spent time in the kitchens of Corton and wd~50. Unlike Frej, the menu at Pearl & Ash shies away from Scandinavian dishes, though Kuo tells Flo Fab that there are "accents here and there." All of the fish and meat dishes, like the cod with white beans, black olives, and tomato or the short ribs with beets, carrots, and chanterelle, are available in either entré sizes or smaller plates. The smaller versions all run between $11 and $15.

The 62-seat space has a 1,000 bottle wine list by Patrick Cappiello, and a cocktail program by Eben Klemm, who most recently consulted on Marcus Samuelsson's project at Lincoln Center. Pearl & Ash opened last night and is open for dinner every night but Sunday, starting at 5:30 p.m.
