Toinght, restaurateur Kerry Diamond and chef Robert Newton will open Nightingale 9, a casual Vietnamese restaurant on Smith Street in Carroll Gardens. The small space sits just across the street from their café Smith Canteen, and just a few doors down from their first project together, Seersucker. Nightingale 9 is a departure for Newton, who has spent much of his career cooking seasonal American fare. To prepare for the opening, the chef traveled through Vietnam, where he picked up recipes from local chefs. This is something that he's wanted to do for a long time.
Although the final menu has not been released yet, expect noodle soups, fried chicken, salads, rice dishes, banh mi-like sandwiches, and shareable meat and fish entrees, all made with locally-sourced ingredients. Most of the items on the menu are priced in the low to mid teens. Nightingale 9 opens for dinner tonight. Take a look around, and do send any early reports our way.
