Last year, The Culinary Institute of America in Hyde Park, NY closed down its student-run dining room, The Esscofier Restaurant. The school updated the kitchen and the space, and reopened it today as The Bocuse Restaurant. The menu includes many old-school French favorites, as well as some more modern creations and a number of recipes that were created by Paul Bocuse himself. Students from the school will cook and serve the dishes, and the kitchen will be used as a training facility when it's not in service. A slew of culinary legends are in Hyde Park right now celebrating its opening. Check out the menus here.
