Angie Mar, who previously worked in the Andrew Tarlow empire, is the new executive chef at Graydon Carter's The Beatrice Inn. Ms. Mar has spent the last few weeks updating the menu. Now it includes things like pan roasted chicken with potatoes and chanterelles, a milk-braised pork shoulder, and a 45-day dry-aged beef burger. Carter and his crew reopened the space last fall with a menu from Brian Nasworthy. Eric Korsh and Hillary Sterling also did stints in the kitchen over the last year. Ms. Mar's new menu is now available during dinner.
