Chuko Team to Open Bushwick Spinoff Next Year

Jamison Blankenship, David Koon, and James Sato are expanding their wildly popular ramen shop Chuko to Bushwick. Blankenship tells Eater that the team just signed the lease on a space on Evergreen Avenue next to Dillinger's for a new restaurant in the same vein as Chuko. The new Bushwick restaurant will have about 70 seats plus a bar in the back, and if everything goes according to plan, it should open in the spring. The crew is also working on another Chuko spinoff, Bar Chuko, in Prospect Heights, which they hope to open in mid-February. Sietsema recently included Chuko's vegetarian ramen on his Ramen Heatmap.
