The food is "ambitious and meticulously detailed," and best in little tasting menu dishes and appetizers. Mishan describes the quail as, "one tiny, perfect breast, cooked swiftly in foie gras butter, and one tiny, perfect leg, simmered in stock and deep-fried." [NYT]
