Jean-Georges Plans to Open a Vegetarian Restaurant

Jean-Georges Vongerichten is not done expanding his ABC Kitchen empire just yet. In a chat with The New Potato today, the chef/restaurateur says that he plans to open a new ABC project that will be totally vegetarian. Vongerichten explains:

We're doing a food market that just opened, and then we're opening a vegetarian restaurant in the spring — 100 percent vegetarian, raw, and vegan. Right now we're starting to import and use local things that we don't make. But eventually, we'll do our own jams under the ABC label. The brand is growing and changing.
The retail component, dubbed ABCMKT, just opened on the lower level of ABC Carpet and Home, near Vongerichten's restaurants. Although the chef previously hinted at plans to make this an Eataly-style dining/retail market, right now ABCMKT is just selling dishware, kitchen equipment, linens, and packaged artisan foodstuffs. No prepared foods, or market produce, but you can buy the same dishes and glasses that are used at ABC Kitchen and ABC Cocina.
