Here we will bypass the famous chefs, the oft-interviewed restaurateurs and GMs and try to shine a light on the individuals in the restaurant industry who perform their duties outside of the public eye. Meaning the meat smokers, the in-house butchers, the bread bakers, the dim sum chefs, and the florists.
As the head pizza chef at Motorino Brooklyn, Sergio Pardo makes about 400 to 500 pies a night. Pardo likes working with the dough and the oven, and in the clip above, he says that he wants to bring Motorino-style pizzas to his native Mexico someday. Hit play on the video to see Sergio in action.
