The Story Behind MP Taverna's 'Untouchable' Branzino

Welcome back to the Eater video feature Untouchables. In it, Eater highlights iconic cult dishes that are practically synonymous with the restaurants that serve them. They are dishes that persist through menu changes, that diners return to again and again, that chefs can't remove for fear of revolt.

Michael Psilakis's "untouchable" dish at MP Taverna is a piece of grilled branzino with potatoes, cherry tomatoes, garlic, and olives. It's a top-seller, but Psilakis also has a special fondness for this dish, because it reminds him of his father. In the clip above, the chef explains: "This dish reminds me of summers going fishing with him, coming back home, us cleaning the fish in the backyard, throwing it on the barbecue, and then us sitting down as a family and just eating."
