Welcome to the first in a series of new Eater videos that take readers inside the kitchens of some of the city's most interesting ethnic eateries. Featured today is Eldridge Street's Super Taste, where Lanzhou hand-pulled noodles were introduced to the city eight years ago. Noodle master Steven Yan was the first in town to make them, and here he shows how it's done, and also reveals that he learned his craft in the Western Chinese city of Lanzhou where they originated.
