Former Per Se sous chef Brian Nasworthy has left Graydon Carter's Beatrice Inn. Partner Emil Varda tells Flo Fab that Nasworthy is "a very talented chef, but his culinary philosophy did not agree with ours." No word yet on Nasworthy's next move. Calliope's Eric Korsh, who previously worked for Carter at Waverly Inn, has stepped in as a temporary replacement. The restaurant opened three months ago.
Flo Fab also learns that Corton vet Mazen Mustafa will be the day-to-day chef at Paul Liebrandt's The Elm in Williamsburg. Liebrandt hopes to serve "food you could eat two or three times a week."
