For months now, there have been rumors that John Fraser was working on a new restaurant with hotelier Andre Balazs in The Standard East Village. Now reps from Balazs's camp confirm that Fraser has been hired as the executive chef at the new restaurant on the ground floor of the hotel.
Fraser and Balazs are still working out the details, but they plan to offer a "vegetable-driven menu" and they hope to use produce from Andre's farm in the Hudson Valley. The new restaurant will have an indoor dining room and an outdoor garden area, plus a cafe. Fraser will remain the chef at his Michelin-starred Upper West Side restaurant Dovetail. The as yet unnamed restaurant is slated to open in the fall.
