Bua to Debut New Menu From Ai Fiori's PJ Calapa

Bua, the first bar from the team behind The Penrose and The Wren, is about to get a new menu courtesy of Ai Fiori's chef de cuisine, PJ Calapa. The chef has known the owners ever since he was a customer back in the early days of the bar, and he also helped them develop the food programs at The Penrose and Sweet Afton. As a longtime friend, he wanted to help them revamp the menu at their first project.

The new menu will include a Double-Double-style smashed burger made with Pat LaFrieda beef, a fried chicken sandwich on Texas toast, a grilled cheese sandwich made with Muarry's Cheese, homemade potato chips, and other snacks. Calapa will be there offering a helping hand when the menu debuts this Sunday.
