Chef Tien Ho has kept a relatively low profile since leaving Ma Peche last year. He collaborated with Andrew Carmellini on a Fresh Eggs dinner, and he worked with Sarah Simmons on a City Grit meal, but didn't sign on to any big new restaurant projects. That is, until now. Today, Eater learns that Ho is teaming up with Little Wisco restaurateur Gabriel Stulman for a brand new French-American bistro concept. Stulman tells Eater that Tien will be both executive chef and partner here, and he notes that this new concept will be designed to "showcase his considerable range, to the utmost."
Stulman can't reveal the location just yet, and he has another new restaurant, Chez Sardine, that he will open before his project with Tien. But the team is definitely in the planning stages. Until work begins on the French-American bistro, Tien will be lending a hand at Stulman's other restaurants in the West Village. It looks like 2013 is shaping up to be a terrific year for French cuisine.
