Ganso, a Japanese ramen and comfort food restaurant from food writer and cookbook author Harris Salat, opened last night in Downtown Brooklyn. On his transition into restaurants, Salat tells Francis Lam, "A restaurant is another way of communicating...I fell in love with Japanese food, the breadth of it, but people come by here and ask if we'll have sushi. It's a chance for me to talk to people about a different side of this cuisine." [NYT]
