Preston Clark, a Jean Georges and JoJo vet who was recently named one of the SF Chronicle's Rising Star chefs, has landed at Resto and its sister restaurant The Cannibal. Owner Christian Pappanicholas tells Eater that Clark has revamped the menu, and that he wanted to bring the chef to Resto because "he's the best meat guy that we know." Clark is also a longtime associate of Cory Lane, who came aboard as GM earlier this year.
Clark replaces former chef Michael Berardino, who just opened Angolo in Soho. The new menu includes small plates like littleneck clams with leeks and creme fraiche, and larger dishes like a pork shoulder for two and a chicken ballotine with maitake mushrooms.
