As executive chef and principal of Jimmy Haber's ESquared Hospitality, Shaun Hergatt will develop several new concepts, including a fish-focused restaurant and a brasserie. The chef says he also wants to reopen SHO once he finds the right Midtown location. Hergatt notes: "SHO had great success and it was a really wonderful restaurant, but the location was a challenge...To work with Jimmy [Haber] at getting a great location is a very nice thing."
