Kate Krader on Jamie at The Dutch and Erika at Battersby

I feel like she has some kind of sixth sense about getting people to their tables, to the bar, etc. She's nice but she's not fake — transparent nice. Full disclosure: she said I could do a stage with her to learn the fine art of hostessing and how to keep your calm when people freak out at you, as they sometimes do in popular Soho restaurants.

I also worship Erika at Battersby. In the tiny space with so few seats she makes everyone feel super welcome and has that uncanny memory for the cocktail/wine/dessert/whatever that you love. She remembers what I like better than I do.
