Brooklyn Fare earns 51 percent of its revenue in grocery sales and therefore answers to the New York State Department of Agriculture and Markets. Other restaurants like those at Eataly have also escaped letter grades by operating within a marketplace. So, if you want to dodge the heavy hand of the DOH, just open a market and put your restaurant inside. Easy. [NYT]
