The Brewster is coming. The hybrid market-restaurant by former Rose Bar GM Frank Roberts signed up former Le Cirque chef Craig Hopson at the end of last year. The initial plan for The Brewster was a restaurant and bar with a second floor café, though with Hopson's arrival that morphed into a restaurant with an "Eataly-type market," only with American food.
The Brewster has been delayed repeatedly: initial projections had it opening last September, though the most recent word was this August. Chances it opens this week? Minimal, at best. Though from a peek through the window it looks like work is coming along?complete with a horseless carriage, a design point that's a clear shout out to fact that the building in which the restaurant is located is The Brewster Carriage House.
