From this day forward, the restaurant formerly known as SHO Shaun Hergatt will now be called The Exchange. The name change comes three weeks after chef Shaun Hergatt officially left the building. Josh Capone, who spent years working in San Francisco, is now the executive chef (check out a PDF of the new menu here.)
The restaurant sent out the following message this morning:
Over the last few weeks many of you have been anxiously awaiting to hear about the changes at the restaurant formally known as Sho Shaun Hergatt. As you know Shaun has moved on and we thank him for his contribution. However - we are delighted that the majority of his team has stayed on to help launch our new concept - The Exchange at The Setai Wall Street.
The Exchange ushers in a new sensibility to The Financial District. While maintaining The Setai's striking decor Executive Chef Josh Capone, a two year veteran o SHO, brings his hometown style of San Francisco based Contemporary American cuisine into play. Ingredients are locally sourced and seasonal. Flavors are bold yet balanced.
The new and more approachable menu now features both a la carte and prix fixe options for lunch and dinner. As an experienced baker Josh's breads and focaccia are now made on premise. To finish a great experience desserts are now under the guidance of former Aureole alum Alise Ciucci.
