When Robert Newton opens his new Vietnamese restaurant Nightingale 9 this fall, the menu will be heavily influenced by his trip this summer to the Southeast Asian country. If the photos (read: food porn) and notes he sent from his trip to Bon Appétit are any indication, expect to see plenty of mangosteen and a reproduction of a glass noodles with crab and crab roe dish he had in Saigon.
