Andy Ricker has never served pad Thai at any of his restaurants, but that's about to change. Next week, the chef will close his first NYC project, the tiny Pok Pok Wing on Rivington Street, and reopen it one week later as a shop specializing in pad Thai.
Ricker tells Flo Fab, "Our kitchen simply cannot manage the volume of wings we have to prep on a weekly basis." Those wings will still be offered at his Brooklyn hit Pok Pok NY, of course, and he hopes to open another wing joint when he finds a space with a better kitchen. Pok Pok Phat Thai will serve pork, vegan, prawn, and prawn & pork versions of the dish, made with rice noodles, broad noodles, or glass noodles.
