New Version of Eleven Madison Park to Debut This Fall

Daniel Humm and Will Guidara are about to change things up at their three Michelin-star fine dining destination Eleven Madison Park, in a major way. The Times reports that after Labor Day, the restaurant's entire repertoire of dishes will be replaced by an interactive dining experience that will pay tribute to the history and culture of New York City.

The $125 menu will no longer be available. Instead, the restaurant will serve a $195 tasting menu of about 12 dishes that will retain the "grid" format. Some of the dishes on this menu:

· A carrot tartare, ground and served tableside
· Sturgeon, in a dome of smoke
· A "clambake" served with hot rocks and a kettle full of water
· A cheese course served from a bespoke picnic basket
· Black and white cookies
· Cheesecake served in a snifter

The meal will also feature magic tricks. Humm and Guidara have teamed with a specialist from a company called Theory 11 to develop a version of Three Card Monte to be performed during the dessert course (guests will get a deck of EMP cards to take home). Guidara remarks: "There is no point in adding elements of showmanship if it isn’t fun...We’re not looking to impress people. We want to entertain them.”

This new meal will be the only one offered at EMP, even during lunch. Humm notes: “Times have changed...Who wants to go to a temple? People want to have fun.”
