Earlier this year, Michael Toscano left the kitchen of Eataly's white tablecloth restaurant Manzo for Gabe Stulman's Perla. And today, Joe Bastianich and Mario Batali announce his replacement: Fitz Tallon. The chef started at Babbo, and he's been at Manzo since opening day.

Tallon quietly assumed the position of executive chef of Manzo this winter, and he's changed around the menu a bit. Although you can still get many of the beef dishes, now the menu include more lighter, market-driven dishes. Tallon also introduced a three-course $29 lunch prix fixe, with some of the favorite dishes from the old menu, plus a few new creations. That is now served Monday through Friday.

Manzo is also serving a brand new spring tasting menu, with dishes like snapper crudo with ramps, and orecchiette with truffles, asparagus, and foie gras sugo. Check out the new menus below.
