Back in January, news broke that The Waverly Inn's executive chef Eric Korsh had plans to open a new restaurant in the former Belcourt space with members of the Prune team called Calliope. Today, The Waverly's principal partner Emil Varda tells Eater that the owners have found his replacement: Ashley Merriman, the Top Chef (and Hottest Chef) alum who has been working as the chef de cuisine under Alex Guarnaschelli at Butter and The Darby. This sounds like a good fit for Graydon Carter's West Village restaurant, as Merriman has plenty of experience cooking American comfort food for celebrities, and the people who love them.
