Peter Serpico, the Director of Culinary operations for the entire Momofuku Empire and the opening chef de cuisine/partner at Momofuku Ko (and James Beard winner), is leaving the David Chang umbrella after six years.
According to a Momo release today he's leaving "to pursue independent ventures" and the opening of the new Momofuku restaurants in Toronto later this year will be his last project with the company. The news comes five months after fellow Momo veteran Tien Ho announced his departure from Ma Peche. Says Chang, "Hopefully we can collaborate on new projects down the road." Note that Sean Gray has been the Momo Ko chef de cuisine for the last year.
