Diners are not getting sick of mid-priced burger chains. Umami Burger owner Sam Nazarian explains the phenomenon: “Consumer awareness, especially around burgers, is evolving....These gourmet burger chains hit a certain psychographic — somebody who is very quality conscious, who is willing to explore and get out of their element.” Nazarian will open the first NYC location of Umami Burger later this year.
