NOMAD— In a Google Talk, chef Daniel Humm and his front of house counterpart Will Guidara reveal that 80% of kitchen staff has begun work at their upcoming restaurant/"urban playground" in the NoMad hotel. They hope to be open by the end of March. [YouTube]

EXPANSIONS— The owners of the Max Brenner chocolate shop and restaurant chain aren't letting a pesky little lawsuit get in the way of expansion. They are looking for new locations downtown with 1,800 - 3,000 square feet in high-density and high-traffic areas of Manhattan. [EaterWire]
