Andy Ricker Would Like Pok Pok Wings All Over NYC

The Willamette Week profiles Andy Ricker, the Portland chef who just opened the wildly popular Pok Pok Wing on the Lower East Side. This spring, Ricker will bring his highly-faithful Thai cooking to the Columbia Street Waterfront District with the opening of his full service Pok Pok restaurant. But after that, he might want to expand his Pok Pok Wing empire across the country, starting with more locations in NYC:

You could potentially open these all over the city...You could have a central commissary that functions as a particle accelerator. This place on the Lower East Side is totally a science experiment.
Ricker is also painfully aware of that fact that expats sometimes have a hard time in NYC, noting: “Is there a chance I could get my ass handed to me? Of course. New York loves to love and they love to hate."
