Welcome back to Sound Bites, an Eater original video feature in which footage of the city's most badass chefs crafting their signature dishes is paired with tunes from up-and-coming musicians. Regarding the volume: turn it up.

In this edition of Sound Bites, the Eater video crew visits Mas (La Grillade) in the West Village to film chef Galen Zamarra making "spit-roasted rabbit with mustard glazed cabbage and grilled seckle pears." Galen explains:

This dish is inspired by medieval France or something. Spit roasting the rabbit is as fun to cook as it is to eat. It is obviously something we serve to a larger group. The smoke is the real key in the dish, and it is the reason such a basic preparation can become extraordinary.
