In her Hungry City column this week, Ligaya Mishan questions the genuineness of Williamsburg fast-food joints Blue Collar Burger and Lake Trout: "There is a fine line between homage and parody. What seems to have been forgotten here is that at those greasy holes-in-the-wall we cherish, people make an effort to do the best they can with the materials at hand. ...
