Laurie Jon Moran is the New Pastry Chef at Le Bernardin

Eric Ripert has finally announced who he's hired to replace pastry chef Michael Laiskonis at Le Bernardin: former Per Se pastry sous chef Laurie Jon Moran. Ripert tells the Times: "He has his own style...but it fits in perfectly with what he have been doing here, incorporating some molecular into traditional ideas."

Originally from London, Moran got his start at Le Manoir aux Quat’Saisons in Oxford before moving on to pastry positions at Daniel and Per Se. Laisonkis left his post at Le Bernardin last month to pursue interests outside of restaurant kitchens.
