Sam Mason Will Open a Mayo Shop in Brooklyn

Last week Here's Greenpoint mentioned that Sam Mason, the former chef/owner at Tailor and the current proprietor of Williamsburg's Lady Jay's, is opening a bar in Greenpoint called Oak and Iron. Today Grub Street reports that that's not all he's opening. The busy chef and entrepreneur is planning a mayonnaise store in Prospect Heights for November to capitalize on the supposed "condiment revolution," we're experiencing right now.

He and partner Elizabeth Valleau will open Empire Mayo, "possibly the world's first shop dedicated entirely to high-end mayo." They'll offer 40 flavors of mayo, including foie gras, mushroom, coffee, and Mason will use much of the space for his personal lab.

Mason has been selling a line of high end mayos at weekly Williamsburg food market Smorgasburg, so the move isn't a total shock. Just a minor one.
