Chef Philip Kirschen-Clark tells Flo Fab that he has left Vandaag, the relatively new East Village restaurant that has won accolades (and two stars) for its Scandinavian fare and creative genever-based cocktails. He explained that the management "wanted a more neighborhood approach but I prefer doing more elaborate food." Kirschen-Clark, who closed the restaurant for a week in February so he could eat his way around Copenhagen, has yet to figure out his next move. Meanwhile, Vandaag owner and manager Brendan Spiro reports that opening sous-chef Seth Johnson will take over in the kitchen.
Vandaag was chosen as one of Eater and Food 52's 16 promising new restaurants to compete in the Bib Tournament, but it got knocked out yesterday, as it was up against the big guns of the Red Rooster.
