1) West Village: Amidst the summer's beer garden explosion, bar a vin Vin Sur Vingt opening today will serve over 50 by-the-glass regional wines. According to the Village Voice, the owner Sebastien Auvet wants to accurately emulate the French wine tasting experience: "We are trying to make people [feel like they're] traveling in France by carrying wine from different regions like Jura, Corsica, Sud-Ouest, also the classic regions like Bordeaux, Loire." 2) Greenwich Village: Gastro Chic reports that Sausage Inc. is now open on University Place in the former space of Wok to Walk with promises of freshly prepared sausage and no additives. Status: Certified Open; 106 University Pl. (between 12th and 13th), 212-414-4344.
3) Little Italy: Taking over the old Umberto's Clam House space, southern Italian joint Crudo opened its doors last night, as Zagat Buzz reports. It's run by the folks from Candela Candela, who bring seafood back to the location: octopus carpaccio, fried cuttlefish, and a swordfish pasta are all on the menu.Status: Certified Open; 178 Mulberry St., 646-559-0640.
4) FiDi: Lower Manhattan-based pastry and coffee shop Financier opened up its fourth Financial District location (and tenth overall) today.
