New York City is home to a lot of restaurants, more than any rational human being can ever hope to visit. Among that number are hidden gems the majority of New Yorkers just aren't unearthing. To help guide us to these potential discoveries, we've enlisted some of our city's many food luminaries to share with us their under the radar recommendations for Dining Confidential.

This week we hear from Nick Anderer, chef at Maialino and Chefs 'N' Cats model. He shares his love for Kanoyama: their raw fish and cold beers just do it for him.

“I plan almost every weekend and every day off around food and drinks, and I constantly find myself seeking out good oysters, good sushi and cold beer, especially when it’s hot out. So it was a godsend when Kanoyama opened their extended room last year, which houses a new sushi/oyster bar that is set up for Chef’s tastings only – omakase style. An ice cold 17oz bottle of Echigo beer, chilled oysters, freshly grated wasabi root and a flight of hand selected raw fish – it doesn’t get much better than that for me.”
