Orange County Choppers consulting chef Chris Lee has some choice words for the blogs (specifically Eater), says fine dining won't survive, complains about persnickety diners, and explains why he recently left his position at Aureole: "The younger chef doesn’t understand what it means to work a full day. They go into it for all the wrong reasons...They don’t go into it for the love. Fine dining requires so much effort, which eats at you. It drove me out of it." [Food Republic]
