JAPAN—Daniel Boulud and eight other NYC chefs will cook in Tohoku Japan over the upcoming Independence Day weekend. Team DB explains: "They will first spend two days in Tokyo preparing the menu to be made entirely with Japanese ingredients and accompanied by the wine of Fukishima (2008 vintage!). They will then travel north to the town of Kamaichi to serve the meal to 1,000 displaced persons in a refugee center in one of the areas hardest hit by the recent tsunami and earthquakes. The lunch is not a fund raiser of any kind, but simply a culinary gesture of comforting and support for these still suffering and now mostly forgotten people of Northern Japan." [EaterWire]
